The traditional products are those agri-food products
whose methods of processing, preservation and seasoning
are consolidated over time, consistent throughout the
territory, according to traditional rules, for a period
of not less than twenty-five years.

Some
of the typical products are: Martina Franca “Capocollo”
(recognized by the slow food), beef ham, “punta di
coltello” sausages from the murgia area, “pizzttedd”,
“burrata murgese”, “caciocavallo cheese”, “mozzarella or
fior di latte” from the murgese area and Martina Franca
fegatini (liver roulade).
